Hida Peach (from Kameyama farm) Parfait

Hida peach is one of the summer brand fruit in Hida region. Hida peach are grown in the highland which has the difference in temperature is over 10 degrees in one day, so the taste is condensed.
Today, we try to make original parfait with this Hida peach, so we would like to introduce the close coverage of Kameyama farm which is local farm.

No.1 Cultivation of peach starts from spring!
The first day of the close coverage was May 1 which was over 3 months prior to be parfait. The farm was full of peach blossoms. We found persons who were picking the blossoms.
We asked the owner Mr.Kameyama why they were picked such a beautiful blossoms. The answer was not to disperse nutrition from blossoms to fruit. They picked every blossom except 3 for each branch. What a daunting task it is!
The peach blossoms are in full bloom at this time every year. Mr. &Mrs. Kameyama pick some blossoms one by one by their hands. This detailed work makes the peach better.
No.2 Putting a bag over a peach
The second day of the close coverage was mid-July. Many peaches in the process of growing were lying on the ground. Mr. &Mrs. Kameyama sorted out some bad fruit from good one. Hida peach is hand-picked, so they should be very delicious.
Peaches are protected by the bags patented technology from rain and foreign enemies. They cover each peach by hands. After that, they lay a silver sheet on the ground to shower the sunlight on all of the peaches.
No.3 They have to protect the peaches from insects and bad weather.
The last day of the close coverage was early August. We found the peach trees bore a lot of fruits. But it does not relieve Mr. and Mrs. Kameyama. Because wild boars and serows would come to eat. These animals can distinguish best fruit from others. Mr. and Mrs. Kameyama have to fight with insects and weather including typhoon. They perambulate not only daytime but also night. They can’t help caring their peaches until harvest.
The reason they can continue to grow the peach is that people look forward to the peach and Mr. and Mrs. Kameyama would like to make people happy with the peach. Takayama Green Hotel agreed to their hope and started to make original parfait!
We started making Hida peach parfait!
We try to make a parfait which the taste changes as people eat. We want the guests to enjoy the peach from the first bite to the last bite, don’t want them to enjoy the peach and ice cream separately.
The parfait is used whole peach. To have a strong impression, we put half of the peach on the top of the parfait. To enjoy the peach until the last, we put peach ice, peach jelly and diced peach. Finally, the parfait has completed!
Now, let’s try it! The top of the peach is fresh, sweet and juicy. Peach ice cream is juicy and goes well with whipped cream. Having diced peach, soft-serve ice cream, sauce and peach jelly at once is recommendable. This parfait will serve by the end of August.
